Bibingka, a piece of Christmas is just around Manila

Browsing my Flickr account, I found some old pics and of course found a Christmas goodie that can be enjoyed whole year-round.

Filipino Yuletide celebration is not complete without savoring some oldie but sure an all-time favorite Bibingka and Puto Bumbong.
 Bibingka is a composed of rice flour, coconut milk, and water. It is often topped with margarine, sugar, sliced cheese and salted egg.
There is an old store named Felimar's Bibingka located near Tayuman Station of the LRT line 1. It's a humble store, with a quite dark ambiance, filled with several pugon(stone stove) and ceramic round pans. People from all walks of life often visits this store anytime of the day (yes! they can satisfy your late night craving :) ).Their best seller is this Bibingka...(i'll update the pic to a more vivid resolution once we have visited the store again.)




The texture of their Bibingka has a perfect combination of a fluffy pancake, hint of the salty-ness from the melted cheese, slight sweetness from the sugar, and the earthy flavor of the banana leaf which crusted the bottom part of the bibingka.

Enjoying this Bibingka is WORTH THE WAIT...
Often times, their patrons need to wait for the orders because the Bibingkas are easily bought right after they are removed from the pugon.

As I wait for my order, I observed how they mix their batter. It's like an art that needs focus and rhythm.
The person cooking the Bibingka goes back and forth the pail of their batter, the cheese platter, margarine container, and egg tray.

It's like they are cooking it in layers and adding margarine and cheese in between.The more special the Bibingka you ordered, the more tedious and the longer it takes to cook. They ensured that the charcoal on top and bottom of the ceramic pan has a good flame to cook the Bibingka perfectly.
 For Dine in customer, they serve Bibingka with hot tea. The Bibingka comes with a batch of freshly grated coconut.

Whenever we are having a road trip to Pampanga . We never failed to get some Turrones de Casoy (nougats with cashew nuts wrapped in melts in your mouth paper-thin wafer). The edible wrapper compliments the sweet honey nougat candy and the roasted chopped cashews on it. Before, we even concocted a Mango-turrones cake, very yummy! The layers of chiffon cake has chopped Turrones de Casoy and Mango-whipped cream. The crunch from the nougats had character to the soft chiffon and sweet mango, too bad there no pic. :( Not recommended for diabetics. This sweet pastry is originally made in Pampanga. However, Turrones de Casoy is now well available in supermarkets that showcases Filipino delicacies. The prices ranges from P75.00 - P200.00 depending on the weight per pack. It comes in 2 packaging: (1) in styrofoam plate wrapped in clear plastic contains roughly 25 pieces; and (2) in shallow tin can that has almost 50 pieces. xoxo tere ;)

Arny - Dading's Peachy-Peachy: new discovery oozing with topping

Pichi-pichi is one of the many Pinoy delicacies. It is made from ground cassava, water and sugar; steamed until transluscent and topped with either cheese or grated coconut. my sister with Arny-Dading's peachy-peachy cheeeessyy!!! peachy-peachy We passed through Mindanao ave. extension and turned to Congressional ave., our driver told us that there is a place were many motorists drop by to buy pichi-pichi. :) We bought a styro pack with 10 pcs of pichi-pichi to give it a try. Well, the 60-peso snack was worth it! LOTS of cheese topping!!! and i mean lots of it!! haha ( compared to other sellers of pichi-pichi ) I have eaten lots of version of pichi-pichi. Arny-Dading's tastes like those from Amber's but less sweeter. Maybe they added some lye to it having the pichi-pichi taste like C uchinta (another kind of rice cake). Checking out their leaflet, they have many branches in Metro Manila and even some provinces. Also, they are not only selling peachy-pe...
